Banana oat muffins with oat crumble topping

These muffins are just plain good! I added more cinnamon than the recipe calls for but thats always up to you. Hardy homemade muffins for the family.


Ingredients
  • 1 1/2 Cups uncooked Oatmeal
  • 1 1/4 Cups Flour
  • 1/2 cup sugar
  • 1 1/2 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt (optional)
  • 1 teaspoon cinnamon
  • pinch ground nutmeg
  • 1 whole egg
  • 1/4 cup oil
  • 1 teaspoon vanilla
  • 4-5 whole over ripe bananas mashed
Topping
  • 1/2 cup oatmeal
  • 1/4 teaspoon cinnamon
  • 2 Tablespoons brown sugar
  • 2 Tablespoons melted butter
Instructions
  1. In a large bowl mix oatmeal, flour, baking powder, baking soda, cinnamon, nutmeg and sugar together.
  2. In a smaller bowl mix egg, oil and vanilla. Add to dry ingredients and stir.
  3. Mix everything together with a hand mixer until you get a creamy like batter
  4. Divide into 12 greased muffin tins...I just made 6 big muffins
  5. In another bowl combine topping ingredients. Sprinkle over muffin batter.
  6. Bake at 375 for 20 minutes
