Banana oat muffins with oat crumble topping
These muffins are just plain good! I added more cinnamon than the recipe calls for but thats always up to you. Hardy homemade muffins for the family.
Ingredients
- 1 1/2 Cups uncooked Oatmeal
- 1 1/4 Cups Flour
- 1/2 cup sugar
- 1 1/2 teaspoon baking powder
- 1 teaspoon baking soda
- 1/4 teaspoon salt (optional)
- 1 teaspoon cinnamon
- pinch ground nutmeg
- 1 whole egg
- 1/4 cup oil
- 1 teaspoon vanilla
- 4-5 whole over ripe bananas mashed
Topping
- 1/2 cup oatmeal
- 1/4 teaspoon cinnamon
- 2 Tablespoons brown sugar
- 2 Tablespoons melted butter
Instructions
- In a large bowl mix oatmeal, flour, baking powder, baking soda, cinnamon, nutmeg and sugar together.
- In a smaller bowl mix egg, oil and vanilla. Add to dry ingredients and stir.
- Mix everything together with a hand mixer until you get a creamy like batter
- Divide into 12 greased muffin tins...I just made 6 big muffins
- In another bowl combine topping ingredients. Sprinkle over muffin batter.
- Bake at 375 for 20 minutes
