Spaghetti Squash Pizza Nests

Let's face it. Many people are on a diet of some sort. Whether its Atkins, Paleo or even Keto. I don't recommend Keto but that's another blog post and discussion. The idea is to eat well and reduce crabs for many of us. The trick is to to find yummy options and make a lifestyle change that lasts. These pizza nests are yummy and not overly difficult. Better yet they are way less expensive than ordering 2-3 pies from the local pizza joint. Here it is

Ingredients


  • 1 medium spaghetti squash, halved
  • 1 tbsp. olive oil about
  • kosher salt
  • ground black pepper
  • grated Parmesan
  • garlic powder or minced garlic
  • Butter for greasing
  • pizza sauce
  • 1½ c. shredded mozzarella
  •  Turkey pepperoni (or healthy no nitrate pepperoni)
  • black olive
  • .parsley, chopped
  • italian seasoning
  • Basil leaves (If you want they are sometimes expensive, best to grow some)


  1. Preheat oven to 400° and line a medium baking sheet with parchment paper.
  2. Drizzle cut side of spaghetti squash with olive oil and season with salt and pepper. Place cut side down on baking sheet and bake until tender, 45 minutes to an hour, depending on the size of your squash. Reduce heat to 375°F when finished baking.
  3. Let cool for 10 minutes before using a fork to shred the squash into spaghetti pieces. Place into a bowl and combine with parmesan and garlic powder. Season with salt and pepper.
  4. Transfer ¼ c squash to a greased muffin pan, pressing down on bottoms and side to create cups. Place in the oven to bake, 15 minutes.
  5. Spoon pizza sauce into each cup, top with mozzarella Parmasean, Pepperoni, black olives (or your favorite toppings) torn up basil leaves if you have them. Bake again, 8-10 more minutes, or until cheese is melted.
