Mom's Tortilla soup

Moms Homemade Tortilla soup


This delicious soup has lots of flavor, esas to make and inexpensive to feed a family. What's not to like. The rice and beans give the soup a hearty feel and spices have just enough kick. 



Ingredients

1 15 oz can whole peeled tomatoes mashed
1 10oz can red enchilada sauce
1 medium onion chopped
1 4 oz can chopped green chile peppers
2 cloves garlic minced
2 cups water
1 14,5 oz can chicken broth 
1 teaspoon cumin 
1 teaspoon chili powder
dash of salt 1/4 teaspoon black pepper
1 bay leaf
1 10 oz package frozen corn
1 tablespoon chopped cilantro
7 corn tortillas

3 chicken breasts



Cut chicken into bite size pieces. Lightly oil a frying pan and cook chicken until lightly browned and cooked thoroughly.
Place all the ingredients into a crock pot and ensure mixed well.
Cover and cook low and slow for 6-8 hours…or on high for 3-4 hours  stir occasionally if on high.
Preheat oven to 400 degrees
Taste and add seasoning to your liking.
Lightly brush both sides of tortillas oil, cut into strips and spread on a baking pan. Bake for 10-15 minutes until crispy and serve over soup. If this is being prepared for that workday meal….. you can shortcut and use store-bought tortilla strips from the salad section.
